Ardmore cook shares Southwestern Baked Chicken through Just a Pinch Recipe Club

Ardmore hometown cook Kristy Willis is sharing her Southwestern Baked Chicken recipe with thousands of others at Just A Pinch Recipe Club, the new online social community for cooks.
Willis is one of several area residents participating in the club, known as “America’s great recipe swap.” Members have the opportunity to post their own “family tested and approved” recipes, try recipes submitted by other club members, print hundreds of grocery coupons and enter recipe contests. They also have the opportunity to utilize a personal online recipe box to save recipes, compile grocery lists and plan meals. In addition, members can create and join discussion groups to chat about recipes, share cooking tips and build relationships as if they are sitting around one big kitchen table.
“We continually add new features to the club based on the feedback of our members,” Just A Pinch Food Editor Janet Tharpe said. “It’s because of people like Kristy Willis, who is proud to share her family’s favorite recipes with other hometown cooks, that the club has become so popular and is growing so fast.”
Willis’ Southwestern Baked Chicken recipe, along with thousands of others, can be viewed, printed and shared at no charge through the recipe club. “This is a Monday night, ‘What am I going to do with this chicken,’” Willis said.

Southwestern Baked Chicken

Ingredients
• 6 chicken breasts, boneless and skinless
• 1 can tomatoes, Italian-style and diced
• 1/4 cup melted butter or margarine
• 1 cup Italian bread crumbs
• 1/2 cup Mexican blend shredded cheese
• Southwestern seasoning mix
• pam
Directions
Trim chicken breasts and place in a baking dish sprayed with pam.
Sprinkle Southwestern seasoning over both sides of chicken.
Pour melted butter over chicken and turn the chicken so all pieces are coated.
Lightly cover the buttered chicken with bread crumbs and press bread crumbs onto chicken with the flat side of a fork on all sides.
Pour diced tomatos over the top as evenly as possible then spread shredded cheese over all.
Bake uncovered at 375 degrees for about 30 minutes, depending on oven.
