Limestone 4-H’er places 4th in national contest

ATHENS — Kayla Stinnett, a Limestone County 4-H Club member and senior at West Limestone High School, placed fourth nationally last week at the National Poultry & Egg Demonstration Competition in Louisville, Ky.

Kayla was selected to represent Alabama at this competition after winning the state “Healthy Living” Demonstration earlier this year.

Because her dish featured eggs, she was eligible to participate in the national competition.

Kayla has been in 4-H for eight years, participating both through the West Limestone Clubs and the Limestone County Junior Leader Club.

She has won numerous honors at the local, regional, and state level through her years in 4-H. Kayla is also active in other organizations, including the West Limestone High School Band.

Kayla is the daughter of James and Lisa Beddingfield.

The competition is sponsored by the National Poultry & Egg Association, and is supported by state affiliates, including the Alabama Poultry and Egg Association.

The purpose of the competition is to help the youth develop leadership and communication skills, improve knowledge of quality, nutrition, versatility, and economic value of eggs, and gain creative skills in the preparation and serving of eggs.

During the competition, Kayla prepared her Chili Cheese Puff.



Chili Cheese Puff



6 eggs

Cup, plus 1tablespoon all-purpose flour

Teaspoon baking powder

1cup 1-percent cottage cheese

2 cups shredded low-fat Monterey Jack cheese

Cup margarine, melted

1 (4 ounce) can chopped green chilies, drained

Teaspoon of garlic powder

Dash of paprika

Dash of salt

Dash of pepper



In a large mixing bowl, beat eggs well. Add the next five ingredients; stir well. Add chilies. Add garlic powder, paprika, salt, and pepper. Mix well.

Pour into a greased 8-inch square baking pan. Bake at 350 degrees Fahrenheit for 40-45 minutes or until knife inserted near the center comes out clean.

Serve immediately.
